Vegetables - Lemon-Dill Rice
4 T olive oil
4 oz chopped onion
200 gr (7 oz) raw long-grain rice
4 fluid oz. dry white wine
grated rind of 1/2 lemon
12 fluid oz chicken stock
1/2 t dried dill
1/4 t pepper
Juice of 1 lemon
2 T chopped parsley
Heat olive oil over mod heat in large fry pan, saute onion 5 mins til tender. Add rice, saute 2 mins. Stir in wine thru dill. Cover, reduce heat to low. Simmer 25 mins till rice is tender, liquid absorbed. Stir in p and lemon juice just before serving. Garnish with parsley.
