Vegetables - Sweet Potato Fries

Serves 4

1 T oil
2 large sweet potatoes, peeled and cut into wedges
1/2 t salt
1/4 t ground black pepper

Mix oil and s & p in bowl, toss potato wedges well. Arrange potato wedges on prepared baking sheet in 1 layer. . Roast 30 mins at 450 F until tender and golden brown.

Variations: use paprika and provence-herbed salt; use butter and nutmeg.
