Vegetables - Apples with Onions and Thyme

3 med apples (1 1/2 - 2 pounds)
2 T unsalted butter
1 med onion, 3-4 oz., thinly sliced
1 T sugar
1 T fresh thyme leaves (or 1 t dried)

Peel and core apples. Cut each into 8 uniform wedges (about 3 cups). Melt butter in large skillet over med-high heat. Add onion and sprinkle with sugar. Cook, stirring often, until onions are translucent but not browned, 3-4 mins. Add apples and cook, turning and shaking skillet often, until golden brown, about 15 mins. Stir in thyme and season.
Makes about 2 cups, Serves 4.
