Vegetables: Green Peas and Wild Mint

2 pounds English peas, shelled
1/2 med red onion, sliced thin
1/2 cup torn mixed mint/peppermint/speermint/black mint
Combine all in vinaigrette.  Toss with salt and pepper.

Sparkling Vinaigrette
1/4 cup red wine vinegar
1/4 cup olive oil
1/4 cup sparkling mineral water
Whisk all, use immediately
