Meats: Pork Chops Oreganata

1 T evoo
2 t grated lemon rind
2 T fresh lemon juice
1 t chopped fresh oregano
3 garlic cloves, minced
4 4 oz boneless pork chops (I don't see why they need to be boneless)
1/2 t kosher salt
1/4 t freshly ground black pepper
cooking spray

Combine first five ingreds in 11x7 baking dish. Add chops, turning to coat. Let stand 30 minutes, turning occasionally. Preheat broiler. Remove pork from baking dish; discard marinade. Sprinkle pork with s & p. Place on broiler pan caoted with cooking spray. Broil 4 mins each side until done. Yield: 4 servings.
