Seafood - Shrimp Fried Rice

3 T cooking oil
1 T garlic, chopped
1/2 onion, sliced
1-2 eggs
250 gr. fresh shrimp
2 cups cooked steamed rice
1 cup cauliflower, sliced
1 cup cabbage, sliced
1 cup straw mushrooms
2 tomatoes, sliced
1 T ginger, sliced
1 T fish sauce
1 T light soy sauce sugared to taste
1 T long chilli, sliced and seeded
2 T spring onions, chopped
2 T coriander

In a wok, fry garlic and onion in oil. Add egg through mushrooms while stirring. Add tomato through coriander. Serve. Serves 2-4.
